History

In Jämtland, thinbread has been baked for everyday life and celebrations for a thousand years. It was simply too cold to grow anything but barley in northern Sweden. Barley has a low gluten content and doesn’t rise well, so unleavened thinbread made from barley flour became a natural part of Northern Swedish food culture. Thinbread could be eaten soft or stored as hard bread for a long time in the storehouses. Thinbread baking could go on for several days, and in every village there was always a woman considered the best at rolling out the dough and a woman considered the best at baking it!Mörsjö deli Thinbread Chips are based on the idea of reusing/developing old traditions. The idea behind thinbread chips came about when a girl was asked to bring snacks to a party, and she did what her mum and her grandma had done for many years: reused old thinbread with oil and baked it again—and with a bit of seasoning—it became an instant success!
